Here's a simple vegetarian recipe for quinoa and cheese. High protein, but not low fat. ☺
For two substantial servings:
- ⅔ cup quinoa
- 1⅓ cup water
- 1 cup shredded extra-sharp Cheddar cheese
- ⅓ cup shredded Parmesan cheese
- 1 egg, beaten
Rinse the quinoa, and drain through a strainer. Add the water, bring to a gentle boil, and simmer covered until all the water is absorbed (about half an hour).
Add the cheese, and stir over low heat until it melts.
Add the egg and mix it in rapidly, then stir continuously over low heat for 1-2 minutes until it begins to thicken.
Serve. My wife and I generally eat this by itself, but you could top it with something -- maybe sauteed mushrooms or onions, or whatever you like.
